Required products :

  • 1 tablespoon salt
  • 6 tablespoons olive oil
  • 1/2 onion, finely chopped
  • 2 teaspoons rice for risotto or Japanese rice for sushi
  • 1 teaspoon white wine
  • 5 tablespoons butter, cut into pieces
  • 1 3/4 tea cup grated Parmesan cheese
  • pepper

Method of preparation :

Put 1 tablespoon of salt and 10 teaspoons of water in a saucepan and bring to a boil.

Meanwhile, fry the onion with a pinch of salt in olive oil until soft. Add 1/2 teaspoon of water and cook until the liquid evaporates. This way you will keep the transparent color of the onion and it will cook without darkening. Try the onion, if it is not completely cooked, add more water and continue until cooked.

Add the rice and mix well to grease. Fry it until translucent - for about 5 minutes, stirring regularly. Add the wine and a pinch of salt. Simmer until the wine evaporates - about 2 minutes - be sure to stir occasionally.

Reduce heat and add 3/4 cup of hot salted water, stirring constantly and waiting for the liquid to absorb from the rice, then add more water, on the same principle, until the texture of the rice becomes creamy and the grains are fully cooked. (You may not need the entire amount of water to cook the rice). When the risotto is ready, it should be creamy and cooked, the liquid should be more than the solid part.

Remove from the heat and add the butter to melt, then add the parmesan, stirring to melt it as well.

If necessary, add a little more hot salted water if you think the rice has absorbed more of the liquid.

Serve the rice and season with black pepper.

If desired, you can then add a variety of roasted vegetables.
