Required products :

  • 0.500 liters of water or broth according to your choice
  • 400 grams of beans
  • 150 grams of white bread
  • 100 grams of butter
  • 100 grams of cream
  • 2 eggs
  • 1 - 2 stalks of celery
  • 1 onion
  • 1 carrot
  • salt to taste

Method of preparation :

Wash the beans with cold water, bring to a boil and when this happens, change the water (pour cold again). Once it boils again, add the peeled onion (whole), carrot, celery. Add salt and cook until the beans are soft. Then remove the vegetables and mash the beans, passing them through a sieve along with the water. Beat the resulting puree with a wire whisk (if it is too thick, pour a little milk or vegetable broth). Heat the soup, add the butter and build up with a mixture of cream and egg yolks. Make croutons out of the bread and bake them with butter. It turns out delicious if you add garlic.
