Required products :

  • 750 grams of white canned beans, rinsed and drained
  • 4 small parsnip roots, cut into cubes
  • 6 large cloves of garlic, with flakes
  • 1 onion, chopped in bulk
  • 4 1/2 teaspoons water
  • 2 tablespoons olive oil
  • 1 tablespoon rosemary / fresh or dried /
  • 1 tablespoon sea salt
  • freshly ground black pepper
  • 1 tablespoon fresh lemon juice
  • pumpkin seeds and olive oil for sprinkling

Method of preparation :

  • Spread the parsnips, onions and garlic on baking paper and sprinkle with rosemary, salt and olive oil.
  • Bake in a preheated 200 degree oven for about 40 minutes until golden brown.
  • Transfer them to a blender, pre-peeling the garlic.
  • Add the beans, water and lemon juice and puree until smooth. Season with black pepper to taste.
  • Pour the cream soup into a large saucepan and bring to a boil over medium heat, stirring occasionally.
  • Divide into bowls and sprinkle with pumpkin seeds and olive oil.
  • Serve the bean cream soup warm with toasted slices of bread.
