Required products :

750 grams of white canned beans, rinsed and drained
4 small parsnip roots, cut into cubes
6 large cloves of garlic, with flakes
1 onion, chopped in bulk
4 1/2 teaspoons water
2 tablespoons olive oil
1 tablespoon rosemary / fresh or dried /
1 tablespoon sea salt
freshly ground black pepper
1 tablespoon fresh lemon juice
pumpkin seeds and olive oil for sprinkling

Method of preparation :

Spread the parsnips, onions and garlic on baking paper and sprinkle with rosemary, salt and olive oil.
Bake in a preheated 200 degree oven for about 40 minutes until golden brown.
Transfer them to a blender, pre-peeling the garlic.
Add the beans, water and lemon juice and puree until smooth. Season with black pepper to taste.
Pour the cream soup into a large saucepan and bring to a boil over medium heat, stirring occasionally.
Divide into bowls and sprinkle with pumpkin seeds and olive oil.
Serve the bean cream soup warm with toasted slices of bread.
