How To Cook Bean Salad With Roasted Peppers, Parsley And Capers - Recipe

Required products :

  • 400 grams of white beans (pre-cooked or canned)
  • 2 roasted red peppers
  • 5 sprigs of fresh parsley
  • 1-3 cloves garlic (according to your taste preferences)
  • 2 tablespoons capers and lemon juice
  • 4 tablespoons olive oil
  • salt and pepper to taste

 

Method of preparation :

Cut the roasted and peeled peppers into long thin strips. Pour the beans into a colander and rinse the beans under running water.

Finely chop the parsley, mash the garlic with a press.

Pour the beans into the salad bowl, add the peppers, parsley and capers.

Make a dressing of olive oil, lemon juice, garlic cloves, salt and pepper to taste.

Season the salad with the aromatic sauce, stir and wait 10 minutes before serving.
