White beans are full of fiber and protein, which help slow digestion and limit the sharp rise in blood sugar.
Canned beans are easy to use and cheap, which makes it very suitable if you do not have time to cook at home.

Required products :

  • 1 cup kale
  • 2 tablespoons roasted pine nuts
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, cut in half
  • 1/2 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 2 teaspoons extra virgin olive oil
  • 3 cups cherry tomatoes
  • 2 cans of beans, rinsed
  • 1/2 teaspoon ground black pepper

* A tea cup is used to measure the quantities.

Method of preparation :

Blend the kale, pine nuts, parmesan, garlic, lemon zest, lemon juice, water, salt and 1 teaspoon of olive oil until homogeneous in a food processor.

Heat 1 teaspoon of olive oil in a large non-stick skillet over medium heat. Add the cherry tomatoes and cook, stirring often, until slightly softened. Then pour the beans and cook for about 3 minutes, stirring occasionally. Season with black pepper. Serve the beans and sprinkle with kale pesto.
