How To Cook Beans With Wild Mushrooms, Leeks And Thyme - Recipe

Required products :

  • 4 cloves garlic
  • 1 stalk of leek
  • 50 grams of carrots
  • 500 grams of wild mushrooms
  • 300-350 grams of old beans
  • 3 sprigs of thyme (dried or fresh)
  • rosemary stalk
  • black pepper and allspice
  • olive oil

 

Method of preparation :

Pre-soak the beans for at least 12 hours, adding 1 teaspoon of baking soda to the water. Then rinse the beans, fill with water and place the dish on the stove. Boil for 7-10 minutes, drain the water, rinse the beans with cold water and return to the heat to boil until ready in new water.

Meanwhile, cook the vegetables and mushrooms.

Finely chop the garlic cloves, leek stalk - first transversely along the length, wash it and then chop. Peel the carrots, wash and cut into small pieces.

Peel the mushrooms and wash, leaving a few whole to decorate the dish, and cut the rest into strips.

Heat olive oil in a pan and add the garlic. Once golden, add the onions and carrots. When they soften, pour the mushrooms into the bowl.

Fry the mixture for about 4-5 minutes, stirring constantly (mushrooms should not release juice).

Then transfer to the pot with the beans, add the spices and cook until the beans are fully cooked. Add salt to the dish five minutes before removing from the heat.

Once the beans are cooked, turn off the heat, wait a while, remove the thyme and rosemary stalks and then distribute on a plate.
