Necessary products:

250 milliliters of vinegar

150 grams of onions

3 egg yolks

2 grams of garlic

150 grams of butter

tarragon

salt to taste

Method of preparation:

Mix the vinegar with the chopped onion, garlic and tarragon. Cook over low heat for 20-30 minutes. Pass the resulting mixture through a sieve, add the yolks and place on the stove in a water bath. Stir constantly and gradually add the butter in pieces. When the mixture thickens, remove from heat, add salt, sprinkle with chopped parsley.
