Required products :

2 kilograms of beef bones - with a little meat on them

2 large carrots - unpeeled

1 through

1 onion

1 head of garlic

2 stalks of celery

2 bay leaves

2 teaspoons black pepper

1 teaspoon apple cider vinegar

Method of preparation :

Preheat oven to 220 degrees.

Cut carrots and leeks in bulk. Cut the onion and garlic in half without peeling them. Put them in a pan with the bones and bake for 20 minutes. Stir and return to the oven for another 20 minutes.

Fill a 6-liter saucepan with 12 glasses of water (preferably filtered).

Add celery (chopped), bay leaves, black pepper and vinegar. Add the bones and vegetables and grate all the pieces of meat from the bottom of the pan. Add the juices that the products have released during cooking.

If necessary, add more water to cover the vegetables and bones.

Put the lid on and bring to a boil. Then reduce the temperature to very low. Use a slotted spoon to clean the foam that has formed. Cook for at least 8 hours, and it is best to let the broth simmer on the stove for at least 24 hours.

The longer the broth simmers, the more saturated it will be. If necessary, add more water.

Once the broth is ready and all the fat and cartilage from the bones have melted, leave it to cool.

Remove the vegetables and bones. Allow the liquid to cool almost completely, then transfer to a smaller container. Leave in the refrigerator overnight. The next day, remove the hardened fat that has formed on the broth.

The broth can be stored for up to 5 days in the refrigerator and up to 6 months in the freezer.

You can also prepare the bone broth in a slow cooker.
