  • 1 teaspoon olive oil
  • 1 kilogram of veal bones
  • 1 kg of veal tail
  • 1 teaspoon butter
  • 2 medium onions, chopped
  • 1 teaspoon fennel seeds
  • 1 teaspoon cumin
  • 1 teaspoon grated ginger
  • 2 tablespoons tomato paste
  • 400 grams of colorful beef
  • 1 stalk of celery, finely chopped
  • 1 teaspoon fresh thyme
  • 1 teaspoon tomato sauce
  • 1 teaspoon green pepper
  • 1 teaspoon white wine vinegar
  • 1 teaspoon dried tarragon
  • 1 tablespoon chopped fresh parsley

Method of preparation :

Fill a large saucepan with 8 cups of water, salt with 1 tablespoon of salt and heat on medium heat.

Add olive oil, veal bones and tail. Put a lid on and reduce the temperature to low, then simmer for 2 hours.

Melt the butter and fry the onion in it. Add the fennel seeds, cumin. Add the ginger and tomato paste, stir and remove from the heat.

Strain the broth into a clean saucepan and return to the hob. Add the meat and simmer under a lid for 40 minutes on low heat.

Add onion and mix well. Add the thyme, celery and stir. Cover again with the lid and cook on low heat for another 20 minutes.

Add the tomato sauce and season with salt and green peppercorns. Stir and simmer for 10 minutes.

Finally, add vinegar, tarragon and parsley. Simmer for another 10 minutes and serve.
