Learn how to cook "Beef in milk sauce Béchamel with mushrooms, onions and eggs". Delicious recipe.
Required products :
1.2 kilograms of beef (whole piece)
1 tablespoon flour
1 tablespoon oil
75 grams butter
150 milliliters milk
1 onion
2 eggs
450 grams mushrooms
black pepper, salt, nutmeg
suitable culinary string / twine
Method of preparation :
Wrap the piece of meat with twine and grease with oil. Place on the oven rack, place a tray underneath and bake (preheat the oven to 200 degrees) for about 50 minutes. Periodically water with the juice.
Then remove and allow to cool slightly, remove the cord.
In a saucepan, melt 25 grams of butter, add the mushrooms and let them fry on high heat for 10 minutes. Remove on paper.
Finely chop the onion.
Make the sauce. Pour a tablespoon of flour into a pan, add 25 grams of butter and stir until the latter melts. Then gradually pour the hot milk and let the mixture prepare until smooth.
Then remove from the heat, add the onion and spices, separate 3 tablespoons of the sauce.
Separate the yolks and whites. Mix the yolks with the mushrooms and most of the béchamel.
Cut the veal crosswise into fibers, not dividing the piece of meat into pieces, let the cuts have a common base.
Spread the pieces with the mushroom combination and connect them again with an auxiliary string, which you run along the length of the veal.
Beat the egg whites with the reserved sauce and the juice that has separated during baking.
Put the veal in a pan greased with the remaining oil and pour over the egg white mixture.
Bake it in a preheated oven (at 200 degrees) until desired. You should not toast. The cooking time depends on the meat you are using. It is important that it stays juicy and tender.
