Wash and dry the meat. Make an X-inch incision in the middle with a depth of 2.5 cm (be careful not to cut it completely). Roll in flour and shake off the excess.
Heat the fat in a pan on the highest level of the hob. Seal the meat on all sides until lightly browned.
Put the beef in a slow cooker. In the slit you have already made, put thinly sliced onion and crushed garlic cloves. Add the potatoes and carrots. Drizzle with beer, balsamic vinegar, Worcestershire sauce. Sprinkle with parsley, black pepper, broth and add the bay leaves.
Cook for 7-8 hours until ready.
When the meat is well cooked and tender, chop it with two forks.
Optionally, serve the dish in cakes on which you have carved the core. You can grease them with a little oil and bake them briefly.
