This is the perfect salad: creamy goat cheese (replace it with feta, if you prefer), roasted beets and avocado. You can add arugula or other green salad to your liking. Don't worry about experimenting.

Required products :

  • 6 medium-sized beets
  • 6 cups arugula
  • 1 avocado, cut into thin slices
  • 100 grams of goat cheese, shredded (or feta cheese)
  • 1/2 cup roasted walnuts, chopped

for dressing:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon maple syrup
  • 2 teaspoons Dijon mustard
  • beehive salt and ground black pepper to taste

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 200 degrees.

Wrap each beet with foil and place in a pan covered with baking paper. Put in the oven to bake for about 1 hour or until soft, then remove from the oven and allow to cool. Peel a squash, grate it and slice it.

In a bowl, mix olive oil, vinegar, maple syrup and Dijon mustard until smooth. Season with salt and pepper to taste.

Put the arugula in a large serving bowl and season with the dressing. Garnish with slices of beets and avocado, shredded goat cheese and walnuts. If necessary, season further with the dressing and stir.
