Wrap the beets in aluminum foil and bake for 1 hour at 200 degrees until soft. Remove from the oven and cool.
Peel a squash, grate it and slice it.
Transfer to a food processor and puree. Add the sesame tahini, garlic, water and lemon sauce. Grind everything until you get a uniform consistency (if you want the paste to be thicker, add water in portions to reach the desired consistency).
Try and season to taste.
