Speculations are famous Christmas cookies not only in Belgium but also in Germany and France. They are prepared especially for the company of coffee. They are not very sweet, but they are extremely crunchy. The classic recipe uses a form with a stamp for the sweets, but even if you do not have one, you can skip it. This is not so important unless you are looking for an authentic look.

Mix the butter, sugar and vanilla with a mixer until a cream is obtained.
Add the eggs, one at a time, stirring well after each one to absorb the mixture - when you add the eggs, stir on a medium mixer.
Mix all other products in another bowl.
Reduce the speed of the mixer and start adding the dry products in portions, stirring constantly.
Store the dough for 2 hours to cool in the refrigerator.
Turn the oven to 175 degrees to preheat.
Line a large baking tray with paper.
Roll out the cooled butter dough to a thickness of about 5 millimeters.
Cut the sweets to the desired shape, if you have some kind of cake stamp, you can use it (and here's what the traditional Belgian speculum stamp looks like)
Arrange the sweets in the pan and bake them for 10-12 minutes, until the edges start to brown slightly.
Remove the pan from the oven and leave the cookies in it for 5 minutes before transferring them to a wire rack where they should cool completely.
When they are cold, you can store them in a tightly closed box and consume them for up to a week.
