Required products :
- 75 grams of may
- 60 grams of warm water
- 200 grams of spring or filtered water at room temperature

Method of preparation :
- In a large bowl, mix the yeast in warm water and let the mixture stand for about 10 minutes, until it forms a creamy consistency.
- Add water and flour and stir with a wooden spoon for 3-4 minutes.
- Transfer the big to a bowl greased with olive oil and cover it with plastic wrap.
- Leave it to rise at a cooler room temperature for 6-24 hours until it triples in size.
- Store it covered in the refrigerator for 5 days.
