Required products :

  • 500 grams of biscuits (not very hard)

For the cream:

  • 200 grams of butter
  • 200 grams of powdered sugar
  • 100 grams of walnuts (or hazelnuts)
  • 2 egg yolks
  • 3 grams of vanilla sugar
  • 1 teaspoon of instant coffee
  • 1 tablespoon cognac

For the stuffing:

  • 1 protein
  • 3 tablespoons jam of your choice

For decoration:

  • hazelnuts, fruit jam or anything else of your choice

Method of preparation :

Start by making the cream. To do this, mix the powdered sugar with the softened butter until fluffy. Add the ground walnuts, which you have previously baked for a short time, to dry. Add the coffee, vanilla sugar and egg yolks. Mix everything thoroughly and add the cognac.

The stuffing. Beat the cooled egg white with a mixer and mix the resulting foam with the selected jam.

You should "assemble" the cake. Divide the biscuits into two parts. Spread half of the walnut cream and the rest of the filling. Arrange them in a suitable container, gluing them in pairs with the appropriate filling. You can arrange a row of biscuits, cover with cream, again biscuits, stuffing and so on until the quantities are exhausted.

Spread the surface of the finished dessert with cream or stuffing and decorate with nuts, jam or optional.
