Prepare an elongated cake tin in which you arrange the biscuits, previously dipped in cold milk. Pour the coconut milk into a saucepan, add the sugar, vanilla and cream.
After boiling the liquid, add the butter, dissolve the starch in more milk and return to the heat, pouring in a thin stream to the milk cream.
Stir until completely thickened and spread on the biscuits so that it fills the form and cool for an hour.
Once the cake is firm, decorate it with the remaining cream, sprinkle with coconut shavings, add the cocktail cherries and mint. Cool again for an hour, cut, serve and enjoy the taste!
