How To Cook Biscuit Roll With Candied Cherries And Cream - Recipe

Required products :

  • 6 egg yolks
  • 180 grams of powdered sugar
  • 900 milliliters of cream
  • 200 grams of cocoa biscuits, crushed
  • 1 teaspoon candied cherries
  • 1/2 cup unsalted pistachios / or other nuts of your choice /
  • 2 tablespoons water

Method of preparation :

  • Mix the powdered sugar and water in a pan and heat them over low heat. Stir with a wooden spoon until the sugar dissolves.
  • Increase the heat and cook for 5 minutes without stirring. With a damp pastry brush, remove the sugar crystals from the walls of the pan and return them to the syrup, taking care not to darken it. Remove from the heat.
  • While the syrup cools, beat the yolks with a mixer until doubled in volume.
  • Without turning off the mixer, gradually add the sugar syrup to them and stir until the mixture cools.
  • Lightly whip the cream so that when you lift the stirrers, soft peaks form.
  • Mix half the cream with the crushed biscuits and the other half with the egg mixture.
  • Stir them together, adding the candied cherries and unsalted pistachios.
  • Spread the mixture in an oblong shape and press well. Level the surface with a spoon, if necessary, and cover with foil.
  • Leave the roll overnight in the freezer.
  • Before serving, turn it over on a tray and decorate as desired.
