Necessary products:

for the dough

  • 60 grams of cold unsalted butter
  • 1 and 1/3 tea cup flour
  • 1/4 teaspoon salt
  • a pinch of sugar
  • 1/2 cup grated Parmesan cheese
  • 1/3 tea cup of ice water

for the filling

  • 1 head of garlic
  • 20 milliliters of white wine
  • 1 teaspoon brown sugar
  • 3 tablespoons butter
  • 2 potatoes, peeled and cut into circles
  • 1 and 1/4 cup grated mozzarella
  • 5 sprigs of thyme
  • grated rinds of one lemon
  • 3 cloves garlic, pressed
  • salt and pepper to taste
  • one broken egg

Method of preparation:

Pour the flour into a bowl and add the parmesan, salt and sugar. Stir, add the butter, cut into fine pieces and mix. Dilute the resulting crumbly mixture with ice water and prepare a firm dough.
Set it aside while you prepare the filling. To do this, heat some of the oil and saute the onions. Add sugar and white wine. Stew the vegetables on low heat for 15 minutes. After changing color, add thyme, lemon zest, garlic, salt and pepper.

Stir and cool the mixture. From the dough roll out a crust 3-4 millimeters thick. Distribute the onion mixture. Heat the remaining butter and saute the potatoes on both sides. Arrange them on the caramelized base, season with salt, pepper, thyme sprig and sprinkle with mozzarella.

Wrap the filling with the edges of the marsh, glue them with a beaten egg.

Place the breadcrumbs in a tray lined with a sheet of non-stick paper and preheat the oven to 190 degrees. Bake for 30 minutes and cool.

Cut the biscuits, distribute in plates and serve warm.

Enjoy your meal!
