Required products :

  • 110 grams of butter at room temperature
  • 110 grams of brown or muscovado sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 60 grams of wholemeal flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 150 grams of oatmeal
  • 40 grams of dried blueberries
  • 30 grams of dried apples, finely chopped
  • 5 blackberries
  • 2-3 tablespoons of sugar glaze
  • 3 very soft bananas, sliced ​​and then frozen

Method of preparation :

Preheat oven to 180 degrees and line two baking trays with parchment paper.

Mix the butter with the sugar, eggs and vanilla. When the mixture becomes airy and fluffy, add the flour that you have previously mixed with the baking powder and salt. Add the oatmeal, dried apples and blueberries.

Put a spoonful of piles on the trays, leaving 3-4 inches between them. Bake for 12-14 minutes until baked. Wait 10 minutes before transferring them to a wire rack to cool completely.

Grind the blackberries in an appliance and then strain the seeds. Mix the liquid with the sugar glaze and with the resulting mixture make a grid on the cookies. Allow to dry for a few minutes.

Meanwhile, prepare the filling. Grind the frozen bananas in a robot until they start to get the consistency of ice cream.

Glue two biscuits together, placing a frozen banana in the middle. Serve immediately.
