How To Cook Black Bean Meatballs With Quinoa And Garlic - Recipe

Required products :

  • 3 teaspoons canned black beans, rinsed and drained
  • 1 onion, finely chopped
  • 1 clove of garlic, pressed
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • salt and pepper to taste
  • peel and juice of 1 lemon
  • 2 teaspoons chili sauce
  • 1 1/4 teaspoon quinoa, boiled
  • 1 egg white

Method of preparation :

  • Separate 1/4 cup of black beans and set aside.
  • In a blender, mix the remaining beans, onion, garlic, spices, lemon juice, grated lemon peel and chili sauce and puree.
  • Transfer the mixture to a bowl and add the reserved black beans, boiled quinoa and egg white. Mix well to form a "dough".
  • Form 6 meatballs and refrigerate for at least 30 minutes.
  • Heat a non-stick skillet over medium heat and distribute the meatballs.
  • Bake them for 3-5 minutes on each side.
  • Serve the black bean meatballs warm, garnished with fresh salad.
