How To Cook Black Lentils With Harissa And Roasted Vegetables - Recipe

Lentils don't have to be the boring stew we've known for years. You can enrich it with vegetables, meat, eggs and it will acquire a completely different look and taste. Here is an idea from us for lentils with sweet potatoes and honey dressing.

Required products :

  • 2 teaspoons salt
  • 2 teaspoons black lentils
  • 1/2 teaspoon coriander powder
  • 7 tablespoons olive oil
  • 2 tablespoons Harissa pasta
  • 1/2 teaspoon black pepper
  • 2 large sweet potatoes, cut into cubes
  • 250 grams of cherry tomatoes
  • 3 tablespoons wine
  • 1 tablespoon honey
  • 1/2 cup chopped coriander

Method of preparation :

Turn on the oven to preheat to 210 degrees.

Put water in a saucepan and salt. Once it boils, add the lentils and cook for 25-30 minutes until soft. Drain and allow to cool.

While the lentils are boiling, roast the vegetables. To do this, mix coriander powder with 3 tablespoons of olive oil, 1 tablespoon of Harissa paste, 2 teaspoons of salt and 1/2 teaspoon of black pepper.

Put the potatoes and tomatoes in a pan and pour the mixture, mix well. Bake for about 25-30 minutes.

Mix the vinegar, honey and the remaining Harissa paste in a bowl. Add the remaining olive oil, stir and salt to taste.

Pour half of the dressing over the lentils and stir, season to taste.

Arrange the lentils on a plate and place the roasted vegetables on top. Drizzle with the remaining dressing.
