Required products :

  • 500 grams of blackberries
  • 300 grams of cooked apples, peeled, finely chopped
  • 3 bay leaves
  • the juice of 1 lemon
  • 1 kg of gelling sugar

Method of preparation :

Put a plate in the freezer (this will help you judge later whether the jam has the right consistency).

Put the fruit in a saucepan, add the bay leaf, lemon juice and 50 milliliters of water. Simmer for 10-15 minutes until the blueberries are soft and cracked. With a potato press, mash them several times to get large pieces of fruit.

Add the sugar and cook, stirring occasionally - for about 5 minutes, until the crystals melt.

Remove from the heat and place 1 teaspoon of the jam on the frozen plate. Leave for a minute, then gently run your finger over the jam. If it wrinkles, then it is ready, if not - return it to the stove and heat it once more and cook for 3-5 minutes, then try again (during this time, return the plate to the freezer). If you have a digital food thermometer, it should reach 105 degrees.

Allow the jam to cool for 1 hour (check it, during this time it should cool, but it should still be warm).

Meanwhile, sterilize jars - wash them well with warm water. Preheat the oven to the lowest setting and put them there to dry upside down for 15 minutes.

Stir the still warm jam and pour it into the jars and close with the lids. Cool completely.
