Required products :

  • 2 cups wholemeal flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt + pinch
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup olive oil
  • 2 teaspoons vanilla extract
  • 2 cups blueberries, fresh or frozen
  • 1/4 cup brown sugar
  • 2 tablespoons melted butter
  • 1/2 teaspoon cinnamon powder

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 190 degrees. Grease a rectangular baking tray with grease of your choice.

Combine 1 and 3/4 cup flour, sugar, baking powder, baking soda and salt. In another bowl, beat the eggs, buttermilk, olive oil and vanilla. Pour the wet ingredients into the dry ones and stir until smooth.

Spread the blueberries in the prepared pan and pour the dough evenly over them.

Combine the remaining 1/4 cup flour, brown sugar, butter, cinnamon and a pinch of salt and sprinkle the mixture on the dough in the pan. Bake the cake for 40-50 minutes or until golden brown. Cool for at least 30 minutes, slice and serve.
