How To Cook Blueberry Cake With Yogurt, Honey And Cinnamon - Recipe

Required products :

  • 1 1/4 tea cups brown sugar
  • 1/4 tea cup white sugar
  • 2 teaspoons cinnamon
  • 2 1/4 tea cups blueberries, fresh or frozen
  • 1 1/2 teaspoons flour + 1 tablespoon blueberries
  • 1 1/2 tea cups wholemeal flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons soda
  • 3/4 tea cup melted butter
  • 3 eggs at room temperature, lightly beaten
  • 1/2 cup honey
  • 1 3/4 tea cups full-fat yogurt at room temperature
  • 2 teaspoons vanilla extract
  • powdered sugar for sprinkling

Method of preparation :

 

  • Preheat the oven to 180 degrees and grease a round cake pan with butter.
  • In a small bowl, mix 1/4 cup brown sugar with the white sugar and cinnamon. Set aside.
  • Pour the blueberries into a medium bowl and sprinkle with 1 tablespoon of flour. If you use frozen fruit, sprinkle them before adding them to the cake batter.
  • In another bowl, sift the flour, baking powder and baking soda. Set aside.
  • In a large bowl, mix the melted butter with the remaining 1 teaspoon of brown sugar, eggs, honey, yogurt and vanilla extract.
  • Gradually add the dry mixture and stir briefly with a wooden spoon.
  • Pour 1/3 of the dough into the prepared form and sprinkle with 1/3 of the cinnamon mixture and 1/3 of the blueberries. Repeat with the other products.
  • Bake for 60-65 minutes or until a toothpick comes out clean from the cake.
  • Allow the cake to cool for about 20 minutes before removing it from the pan.
  • Carefully turn it over, sprinkle with powdered sugar, cut and serve.
