Gorgeous homemade ice cream with blueberry syrup and soft sweet taste.

Required products :

  • 2 eggs
  • 1/2 cup sugar + 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 cup fresh milk
  • 2 cups full-fat yogurt
  • 300 grams of frozen unsweetened blueberries
  • 2 tablespoons lemon juice
  • blueberries and mint for decoration

Method of preparation :

Beat the eggs with 1/2 cup of sugar and salt in a saucepan until slightly thickened. Pour the milk and beat. Cook over medium heat, stirring constantly for about 10 minutes. Place the pan in a bowl of cold water and stir until cool. Add the yoghurt and stir again. Refrigerate for 8 to 24 hours.

Mix the blueberries with 1/4 cup sugar and lemon juice in a small saucepan. Bring to a boil over medium heat, stirring often. Reduce heat and simmer until syrupy, about 5 minutes. Allow the mixture to cool and transfer to a bowl. Refrigerate for 8 to 24 hours.

Mix the egg cream with the blueberry and store in the freezer for 6 to 8 hours. Allow to stand at room temperature for 20-30 minutes before serving. Garnish with fresh blueberries and mint if desired.
