Required products :

Dry ingredients :

  • 2 1/2 teaspoons flour
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sugar
  • 1/4 teaspoon salt

Wet ingredients :

  • 1 cup buttermilk
  • 1/4 tea cup unsalted butter, melted
  • 4 tablespoons vegetable oil
  • 2 large eggs, lightly beaten
  • 2 teaspoons vanilla extract

About the filling :

  • 250 grams of blueberries / fresh or frozen /

Method of preparation :

 

  • Preheat the oven to 200 degrees and place 12 paper baskets in the nests of a standard muffin tin.
  • Mix the flour, baking powder, baking soda, sugar and salt in a large bowl.
  • In a separate bowl, mix the buttermilk with the melted butter, vegetable oil, eggs and vanilla extract.
  • Make a well in the bowl with the flour and pour the egg mixture.
  • Stir briefly without worrying that there will be a few lumps of flour left.
  • Add most of the blueberries and stir again to distribute.
  • Spread the dough in the paper baskets and sprinkle with the remaining blueberries.
  • Bake for 5 minutes, reduce the temperature to 180 degrees and bake for another 15 minutes.
  • Transfer the blueberry muffins to a wire rack to cool briefly.
  • Serve warm or at room temperature.
