Required products (quantities are approximate) :

  • 2 kilograms of bacon
  • 2-3 full handfuls of onion peels
  • 1 large onion with flakes
  • 1 tablespoon ground cardamom
  • 20 grains of black pepper
  • a pinch of sweet red pepper for cooking, and for sprinkling - to taste
  • hot red pepper on the tip of a sprinkling knife, for cooking - a pinch (or finely chopped hot red pepper)
  • 8 tablespoons salt
  • garlic to taste

 

Method of preparation :

Put the onion peels in a suitable container, fill with enough water to cover the bacon, which you will put later. Add the whole onion (without peeling), salt, black peppercorns, hot and sweet red pepper (or a little chopped red pepper), cardamom and put everything on the stove, it should boil.

During this time, cut the bacon into pieces no thicker than 5 cm.

When the water boils, count for 5 minutes and put the bacon in it. Let it boil for 10 minutes. Meanwhile, prepare the spices to sprinkle.

Finely chop the garlic or grate it. Mix red and black pepper, if desired, use other spices.

When you take the bacon out of the water, let it cool a bit.

 

Then rub the pieces with garlic and spices.
