Cut the leeks into small pieces, peel the carrots and grate them coarsely. Stew the two vegetables in a deep pan with a little olive oil.
When the porridge has cooled, add the grated boiled potatoes, soft cheese, chopped parsley, eggs (raw) and season.
Mix the products well and make meatballs from the minced meat, which you roll in a mixture of equal amounts of flour and breadcrumbs.
Fry until golden brown on both sides.
