Break the bread into small pieces, put in a deep bowl. Peel and finely chop the onion, fry it until soft in butter and pour everything over the bread.
Heat 300 milliliters of fresh milk, pour it into the bowl with the other products, add the eggs, season with salt, pepper and nutmeg to taste. Mix the resulting combination until smooth and let it stand for 20 minutes.
Then add chopped parsley, knead lightly and spread the dough on foil. Roll up a roll, if necessary, wrap in a towel. Tie the ends with cooking thread and put the roll to boil in a suitable saucepan for about 20 minutes.
If desired, use a little crushed pistachios.
Finely chop the shallots, wash the mushrooms, cut them in half. Fry onions until soft in olive oil, add the mushrooms, pour the cream and the rest of the milk, add the cream cheese. Let the sauce boil for about 5 minutes on low heat, season it with salt, black and cayenne pepper, add 1 tablespoon of chopped green onions. If the sauce is too thick, pour a little fresh milk.
Remove the finished dumplings from the water, unroll the towel, remove the foil. Cut the roll into pieces, serve with the mushroom sauce, sprinkling the dish with the remaining green onions.
