Required products :

  • 2 tablespoons butter
  • 400 grams of spinach (leaves only)
  • 2 tablespoons water
  • 1 small clove of garlic, finely chopped
  • 110-130 grams cut into small pieces of bread
  • 2 large eggs
  • 3/4 tea cup thick cream
  • a pinch of grated nutmeg
  • shredded ricotta cheese
  • kosher salt and freshly ground black pepper


Method of preparation :


Turn the oven to 160 degrees, grease the bottom of the baking dish with oil.

In a large skillet, melt 1/2 tablespoon butter, add the spinach, pour the water and add the garlic. Season with salt, pepper and stir several times.

Close the pan with a lid and cook the spinach for about two minutes until soft, then drain the liquid using a colander placed over a bowl. Save 1/4 cup of broth.

Spread the spinach leaves on baking paper to dry.

Heat the remaining 1 1/2 tablespoons butter in a pan and place the pieces of bread. Let them cook over medium heat until browned (about 3 minutes). Then stir and let the bread crumbs remain on the hob for another 2-3 minutes to make them crispy. Remove to a plate.

In a bowl, beat the eggs with the cream and spinach broth. Add 1/2 teaspoon salt, 1/8 teaspoon black pepper and a pinch of nutmeg.

Then in the same bowl pour the spinach, stir and distribute the mixture in a greased form.

Place the bread on this base and place the form in another pan, which you fill with water (to cover 1/3 of the dish).

Bake the pudding for 35-40 minutes, and at the end of cooking add the crushed ricotta.

When the finished dish has cooled, cut into pieces and serve.
