Required products :

  • 1 head of garlic
  • 1 1/2 tablespoons olive oil
  • 2 tea cups finely chopped mushrooms
  • 1/4 tea cup warm water (about 45 degrees)
  • 1 packet of dry yeast
  • 1 teaspoon cottage cheese
  • 1/4 cup finely chopped parsley
  • 1 egg
  • 2 tablespoons sugar
  • 2 tablespoons finely chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 3/4 tea cup wholemeal flour
  • 1 1/2 - 1 3/4 tea cup flour

Method of preparation :

Preheat oven to 210 degrees.

Remove the thick layer of onion peel, without having to completely peel the cloves. Cut 1/4 of the top of the garlic and pour it with 1 tablespoon of olive oil. Wrap in foil and bake for 25-35 minutes until soft. Allow to cool, then squeeze the inside of the cloves and mash completely with a fork.

Fry the mushrooms in 1 tablespoon of olive oil until soft - about 5 minutes. When browned, remove from the heat.

Combine water and yeast, leave to swell for 10 minutes.

Put the mushrooms from the pan, together with the sauces separated in it, next to the garlic. Add the cottage cheese, parsley, egg, sugar, onion, salt and baking soda. Pour the yeast. Add the wholemeal flour in portions to knead a soft dough that does not stick. Cover with foil in a greased bowl and leave to rise for 1 hour and 15 minutes until doubled.

Grease a pan with a diameter of about 20 centimeters with grease of your choice and lay a sheet of parchment paper on top.

Press the dough several times down with your fist and then transfer to the prepared pan. Leave to rise again for about 30-40 minutes under a towel or foil.

Preheat the oven to 175 degrees and bake the bread for 30-35 minutes until done. If you feel that it is not ready yet, cover with foil and extend the baking for another 10-15 minutes.

Separate the bread from the pan by running a knife along the walls of the bowl and remove from the pan. Remove the sheet of parchment paper from the bottom and cool on a wire rack to prevent the bottom crust from getting wet. Allow to cool completely before cutting.
