Necessary products
For the dough:
350 grams of flour + 1 tablespoon
8 grams of dry yeast
120 grams of butter
1 egg + 1 yolk
1/2 teaspoon salt
1 teaspoon sugar
125 milliliters of warm water
For the stuffing:
1 stalk of leek (can be replaced with a bunch of green onions)
10 fresh mushrooms
3 tablespoons sesame seeds
2-3 tablespoons olive oil
salt and ground black pepper to taste
For spreading:
1 egg white
1 tablespoon olive oil
Method of preparation :
In a small bowl, mix the water with the sugar and yeast.
In a separate bowl, grind the butter with the flour, add salt and add the already risen yeast, eggs and knead a soft dough. Cover it with a towel and leave in a warm place to rise.
Meanwhile, make the filling.
Heat olive oil and fry the chopped mushrooms in it. Then add leeks or green onions to them, let the products simmer until the liquid evaporates in the bowl. Season with salt and ground black pepper to taste.
Once the dough rises, roll it out into a rectangle measuring 35 x 30 cm and spread the mushroom filling on its surface. Sprinkle with sesame seeds and roll into a roll, which is cut into pieces about 2 cm thick. Arrange them in a suitable dish, spread them with a mixture of 1 egg white and 1 tablespoon of olive oil and leave the bread to rise.
Then bake in a preheated 180 degree oven until golden (about 25-30 minutes).
