Necessary products:

  • 2-3 tablespoons olive oil
  • 1 and 1/2 cups wholemeal flour
  • 1/2 cup powdered sugar
  • 1 and 1/2 teaspoon baking soda
  • 1 and 1/2 teaspoon baking powder
  • 1 tablespoon cinnamon powder
  • 1 teaspoon ground cardamom
  • 2 teaspoons ginger powder
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup oatmeal
  • 3 large carrots
  • 1 and 1/2 cups fresh or canned pineapple (strained and mashed)
  • 3 large eggs
  • 30 grams of butter (melted)
  • 1 cup walnuts (100 grams)

for the glaze:

  • 1 cup yogurt
  • 1 tablespoon maple syrup
  • 2 tablespoons pineapple juice

Method of preparation:

Preheat oven to 190 degrees. Brush the bread pan with olive oil.

In a large bowl, sift together the flour, powdered sugar, baking soda, baking powder, cinnamon, cardamom, ginger, cloves and salt. Add the oatmeal and stir to mix well.

In a separate large bowl, mix the well-grated carrots, mashed pineapple, beaten eggs and melted butter.

Add the wet ingredients to the dry ingredients and mix well so that no lumps remain. 

Pour the crushed walnuts into the mixture and mix well with a spatula.

Pour the dough into the prepared bread pan and smooth the mixture on top.

Bake for about 1 hour, until the toothpick placed in the center of the bread comes out clean.

While the bread is baking, make the yoghurt glaze. In a small bowl, combine the yogurt, maple syrup and pineapple juice. Stir until well combined. Refrigerate.

Remove the bread from the oven and wait for it to cool for 10 minutes. Remove from the bread pan and allow to cool completely on a stand. Cut the bread and spread with the glaze of milk and pineapple.
