Required products :

for the dough:

  • 1/2 cup raw pistachios
  • 2 1/2 teaspoons flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 250 grams of butter, cold, cut into cubes

for the stuffing:

  • 1 tablespoon olive oil
  • 1 stalk of leek, cut lengthwise and into slices
  • 120 grams of goat cheese
  • 5 tablespoons cream
  • 2 cloves garlic, finely chopped
  • 4 tablespoons finely chopped dill
  • 2 large potatoes, thinly sliced
  • 1 egg

Method of preparation :

Put all the dough products in a food processor and mix with a few pulsations to get crumbs. Another option is to grind the butter in the flour with your hands, not overdoing it so as not to heat the butter too much. Carefully add 1/2 cup of ice-cold water while the robot is working and form a ball. Wrap in foil and cool for 30 minutes.

For the filling, put 1 tablespoon of oil in a pan and fry the leeks until soft for about 5 minutes. Transfer to a plate.

Mix the goat cheese with the cream, garlic and season with salt and pepper.

Divide the dough into 4 balls and roll each one out.

Put them in trays lined with baking paper. In the middle of each loaf put the cheese mixture, leaving without stuffing a wide edge of 3 cm at the end. Sprinkle with dill and spread the thinly sliced ​​potatoes and leeks. Fold the edges of the dough towards the center, slightly overlapping the products.

Spread the dough with beaten egg.

Bake the breadcrumbs until their crust is golden and crispy.

If desired, you can lightly spread with honey and sprinkle with more dill when serving. Also, instead of 4 small ones, you can make 2 bigger ones.
