Required products :
2 medium eggplants
12 thin slices of soft cheese sprinkled with 1 dessert spoon of marjoram
12 circles of tomato
salt
About the breading:
2 egg whites
1 egg yolk
1 teaspoon breadcrumbs
Method of preparation :
Cut the aubergines into circles about 1 cm thick. Sprinkle with 3 tablespoons of salt and leave for an hour. Then rinse and dry.
Put a piece of soft cheese and a slice of tomato on half of the circles, close with the remaining aubergines. Secure with toothpicks.
Beat the egg whites until foamy, then add the yolk and beat again. Put some of the breadcrumbs and stir.
Spread the aubergines with the mixture, sprinkle with the remaining breadcrumbs and arrange in a tray, the bottom of which you have covered with foil.
Bake in the oven at a moderate temperature for about 20 minutes.
Serve the appetizer immediately.
