How To Cook Breaded Aubergines With Tomatoes And Mozzarella - Recipe

Required products :

  • 1/2 teaspoon flour
  • 3 eggs
  • 2 tea cups bread crumbs (or breadcrumbs)
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 eggplant
  • 1/4 tea cup olive oil
  • 2 tomatoes, cut into circles
  • 250 grams of mozzarella (cut into slices)
  • fresh basil
  • 1/4 tea cup grated Parmesan cheese
  • 1/4 teaspoon hot red pepper flakes

Method of preparation :

Prepare the products for the breading: put the flour in a shallow dish, in another bowl beat the eggs, and in a third pour the bread crumbs (or breadcrumbs), seasoned with salt and pepper.

Cut the eggplant into slices about 1 cm thick.

Bread the eggplant slices in the flour, then dip them in the eggs and finally roll in the breadcrumbs. Arrange all the slices next to each other in a large plate.

Heat a frying pan with 1/4 tea cup of olive oil. Fry the aubergines for 3 minutes on each side until golden brown. Take them out on a napkin.

Preheat oven to 200 degrees.

Arrange the eggplant slices next to each other in a large pan and place a circle of tomato and a slice of mozzarella on top of each. Bake for 3-5 minutes until the cheese begins to melt. Remove from the oven, place a basil leaf on each eggplant and sprinkle with grated Parmesan cheese and red pepper flakes.
