Required products :

  • 250 grams of flour
  • 250 milliliters of chicken broth
  • 2 eggs
  • 300 grams of breadcrumbs
  • oil

For the stuffing:

  • 3 ready (boiled or roasted) chicken legs
  • 150 grams of cream cheese
  • 100 grams of corn kernels
  • 1 bunch parsley
  • 1 lime
  • left

For the sauce:

  • 6 tomatoes
  • 1 red sweet pepper
  • 1 head sweet red onion
  • 1 clove garlic
  • 2 tablespoons wine vinegar
  • 4 tablespoons olive oil
  • 1 teaspoon of sugar and salt
  • cayenne pepper

 

Method of preparation :

Bring the broth to a boil, then pour the flour into it and stir. Knead a stiff dough, cover and allow to cool completely.

Make the sauce. Randomly chop the tomatoes, peppers, garlic, parsley and onion. Pour them into a blender, add salt and sugar, vinegar and oil. Beat, pieces of vegetables should remain in the mixture, do not puree them. Refrigerate.

Cut the boiled or roasted chicken into fibers, saturate the parsley, grate the lime peel and squeeze the juice. Mix all this with cream cheese and corn, season with cayenne pepper and salt.

Take a small dough (the size of a plum), flatten it with a flat loaf with a diameter of 8 cm and put the filling in the middle. Gather the edges of the dough to form a bag. Pinch, giving the appearance of a pear. In this way, "construct" all the croquettes.

Dip each in beaten egg, then roll in breadcrumbs and fry in hot oil. After about 4 minutes, their surface will be covered with a light brown crust. Then remove on paper so that it can absorb the unnecessary fat that the bites have absorbed during frying.

Serve the appetizer hot, and as an addition, offer the sauce you have prepared.
