  • 2 pieces of chicken breast
  • 2 broken eggs
  • 1 cup grated coconut (or coconut shavings)
  • salt and pepper
  • 1 romaine lettuce (or other leafy greens)
  • 1 red pepper
  • 2 teaspoons chopped pineapple
  • 1/2 cup coconut milk
  • juice from 2 lemons
  • peel of 1 lemon

 

Method of preparation :

Turn the oven to preheat to 200 degrees. While it is warming, bread the chicken breasts in flour, dip it in the beaten eggs and roll in the coconut shavings. Put the breaded fillet in a pan (lined with paper), season with salt and pepper and bake for 12 minutes until the breaded meat turns brown.

Meanwhile, prepare the salad - chop the romaine lettuce, add sliced ​​red peppers and pineapple.

Cut the chicken and add it to the salad.
