Required products :
- 4 chicken breasts
- salt and freshly ground black pepper
- 2 tablespoons oil
- 2 tablespoons olive oil
About the breading :
- 1/2 cup flour
- 2 eggs
- 2/3 tea cup breadcrumbs
- 1/3 tea cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons fresh herbs, finely chopped / thyme, parsley, rosemary, etc./
Method of preparation :
- Season the chicken fillets on both sides with salt and freshly ground black pepper.
- Pour the flour into a large shallow dish.
- In another bowl, mix the flour, breadcrumbs, grated Parmesan cheese, salt, pepper and fresh herbs.
- Beat the eggs in a bowl.
- Roll the chicken breasts in flour and shake off the excess.
- Dip in beaten eggs and roll well in Parmesan cheese mixture.
- Heat the oil and olive oil in a large skillet over medium heat.
- Add the fillets and fry for about 3-4 minutes until golden brown.
- Turn and fry for another 2-3 minutes.
- Serve the breaded chicken steaks warm, garnished with lemon slices and vegetables of your choice.
