Required products :

  • 4 chicken breasts cut into thin fillets
  • salt and pepper to taste
  • 1/4 tea cup flour
  • 1 tablespoon olive oil
  • 3/4 tea glass of dry white wine
  • 1 medium onion, chopped
  • 4 fresh, pitted apricots and diced
  • 2 tablespoons apricot jam
  • 2 teaspoons fresh tarragon (or 1/2 teaspoon dried)

Method of preparation :

Season the chicken fillets to taste with salt and pepper and roll them in flour. Heat olive oil and fry the meat until browned or for about 3-5 minutes per side. Transfer to a plate and cover with a lid.

Reduce heat to low and fry onions in pan. Add the apricots and cook until soft. Pour apricot jam, tarragon and salt to taste. Add the chicken and cook for 1-2 minutes. 

Serve the breaded chicken with apricot sauce on a plate and optionally add a garnish of quinoa and steamed spinach.
