Required products :

  • 2 medium aubergines
  • 8 basil leaves
  • 420 grams of ricotta cheese
  • 100 grams of grated ripe mozzarella
  • 1/2 cup finely grated Parmesan cheese
  • 4 eggs
  • flour
  • breadcrumbs
  • frying oil

Method of preparation :

Cut the eggplant into slices about 1 cm thick and arrange them on kitchen paper. Salt it on both sides and leave for 30 minutes. Dry it with a napkin.

Finely chop the basil, put it in a bowl, add the ricotta, mozzarella, parmesan and one egg. Stir.

Take two pieces of eggplant. Put 1 teaspoon of the ricotta mixture on one, close with the other slice. Arrange in a tray covered with paper.

When you are done with all the aubergines, put them in the freezer for 30 minutes to 1 hour.

Divide the flour, eggs and breadcrumbs into three bowls.

Bread the eggplant in the flour, then in the egg, breadcrumbs, again in egg and breadcrumbs. Fry in an oil bath until golden brown.

Drain the eggplant from the excess fat on kitchen paper, salt and serve with Marinara tomato sauce.
