Method of preparation :
Cut the eggplant into circles about 1.5 cm thick. Sprinkle with salt and allow to drain the bitter juice.
Beat the eggs and mix the breadcrumbs with 1/2 cup of Parmesan cheese.
Roll the eggplant in the eggs, then in the dry mixture. Arrange in a paper-lined tray.
Drizzle with a little fat and bake at 220 degrees for 30-35 minutes.
In a rectangular deep pan put 1 ladle of marinara sauce and spread it on the bottom. Arrange a row of eggplant on top and pour more sauce. Sprinkle with 1 cup of mozzarella, half of your remaining Parmesan and basil. Repeat the process until your products are finished.
Bake for 15-20 minutes to give the dish a golden appetizing crust.
