Drain the olives from the marinade, put the flour and breadcrumbs in two separate plates or bowls, beat the egg in a third bowl.
Roll the olives first in the flour, then dip in the beaten egg and finally put in the bowl with the breadcrumbs.
Immediately fry in hot oil for about a minute and remove on paper, which will absorb excess fat. Then transfer to a plate.
Make a sauce by adding lemon juice and crushed garlic cloves to the mayonnaise.
You are ready to serve the crunchy appetizer.
