Required products :
450 grams peeled and boiled to soften potatoes
2 teaspoons sauerkraut
1 teaspoon diced ham
2 egg yolks
3/4 teaspoon wholemeal mustard
2 tablespoons chopped green onions
About the breading:
2 teaspoons wheat flour
2 eggs, beaten with 2 tablespoons milk
3 tablespoons fine breadcrumbs
salt and ground black pepper to taste
frying oil
1.5 teaspoons sour cream
1 tablespoon finely chopped parsley
Method of preparation :
Cut the boiled and peeled potatoes into small cubes, then mash them in a large bowl.
Add to the puree finely chopped sauerkraut, diced ham, egg yolks, 1/4 cup of mustard and green onions. Mix everything thoroughly, season with salt and ground black pepper to taste.
From the resulting combination, form small balls (use about 1 tablespoon of the mixture to make one bite), which you arrange in a tray, the bottom of which you have covered with baking paper. Refrigerate for 30 minutes.
Heat the frying fat. Season the flour, beaten eggs with the milk and the breadcrumbs with salt and pepper, then roll each potato ball first in the flour, then dip in the eggs and finish the breading with the breadcrumbs. Fry the bites in portions in oil until golden (about 2-3 minutes are enough). Remove the finished ones on paper so that it can absorb the excess fat.
In a small bowl, mix the remaining mustard and cream, add salt and pepper, stir.
Serve the appetizer with this sauce and sprinkle with chopped fresh parsley.
