How To Cook Breaded Potato Meatballs With Spinach And Eggs - Recipe

Necessary products

For the dough:
8 medium potatoes
1 large onion
1/3 tea cup fresh milk (or the broth obtained by boiling the potatoes)
salt to taste
1/2 teaspoon flour

For the filling:
1
tablespoon spinach 1 tablespoon dried (or fresh) green spices
3-4 boiled eggs
salt to taste

For the breading:
1 egg
flour, semolina or breadcrumbs a
little salt
frying oil + a piece of butter

Method of preparation :

Peel a squash, grate it and boil it in salted water until tender. Pour in the warm milk and mash well. Peel an onion and cut it into small cubes. Fry it in hot oil, stirring often and being careful not to burn. When it turns red, pour a little water and leave the dish on the stove until it evaporates.
Add the prepared onion to the mashed potatoes, add the flour and mix until smooth. Refrigerate for about 20-30 minutes.
Remove the hard parts and stems of the spinach, wash it and chop finely. Then stew in a little oil along with the green spices. Transfer to a bowl.
Boil the eggs hard, peel and chop. Mix them with spinach and season with salt and pepper.
Take the potato dough out of the fridge and start shaping the meatballs.
Break a little of the dough, spread it on your palm and put 1 full tablespoon of the filling. Cover with the potatoes and dip each meatball in the beaten egg, then roll nicely in semolina, flour or breadcrumbs and fry on both sides until golden brown.
Instead of eggs, you can use cheese and improvise with the filling of your choice.
