Necessary products:

 

  • 1 kg of potatoes
  • 1 teaspoon flour
  • 4 broken eggs
  • frying fat
  • 1 head of garlic
  • 1 bunch parsley
  • 500 milliliters of chicken broth
  • salt and pepper

 

Method of preparation:

 

Peel a squash, grate it and slice the potatoes. Beat the eggs, add salt to taste and roll the potatoes first in the flour, then dip them in the egg mixture. Heat more fat and fry them until golden.

Drain the potatoes on kitchen paper. Put the peeled and chopped garlic cloves in a mortar, add parsley and mash until homogeneous. Pour the broth into a saucepan, add the aromatic spices and wait for it to boil.

Add the potatoes and stew the dish for 30 minutes on low heat. When ready, pour portions and garnish with some of the reduced broth. Serve and eat with pleasure.
