Required products :

For the meatballs:

  • 3 1/2 teaspoons chicken broth
  • 4 tablespoons butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, sliced
  • 1 cup rice (arborio)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon dry white wine
  • 1 cup grated Parmesan cheese
  • 1/4 tea cup for cooking cream
  • 2 teaspoons lemon zest, grated
  • 1 tablespoon lemon juice
  • 1 teaspoon black pepper
  • 100 grams of mozzarella (drain it on a towel)
  • 2 tea cups large breadcrumbs (panko breadcrumbs)
  • 1/2 teaspoon flour
  • 2 eggs

for the sauce:

  • 3 tablespoons finely chopped chili peppers in the marinade with jar oil
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons grated lemon peel
  • 2 teaspoons lemon juice
  • 1/2 head of garlic, finely grated

Method of preparation:

Prepare the sauce by finely chopping the hot peppers from the jar , add the lemon peel and juice, and finally the garlic. Stir well to combine.

Set aside, the sauce can be prepared 12 hours in advance and stored covered with fresh foil in the refrigerator.

For the meatballs, bring the broth to a boil and keep it warm afterwards.

In a saucepan, heat 2 tablespoons butter and fry the onions until soft, about 4-5 minutes. Add the garlic, a minute later add the rice and season with salt and pepper. Fry it for 3 minutes. Pour out the wine and cook, stirring constantly, until the liquid is absorbed.

Pour 1 cup of the broth and stir again, after it is absorbed (after about 4-5 minutes) add another cup. Continue like this until you have absorbed the entire amount of broth. Stir in the rice parmesan, cream, lemon zest and juice, season.

Spread the rice in a baking tray lined with parchment paper. Cool it for at least 1 hour covered with foil so that it does not dry out.

Cover another tray with foil. Take some of the rice, add a small piece of mozzarella on top and cover with more rice. Try to shape a meatball - it does not have to be in perfect shape. Arrange the balls in the prepared pan and freeze for 10 minutes.

Divide the flour, eggs and breadcrumbs into three plates and season each ingredient with salt and pepper.

Roll the meatballs in the flour, then in an egg and finally in the breadcrumbs. Arrange the prepared meatballs again in the pan on paper and cool in the freezer until you burn the fat.

Put oil in a deep pan and heat it. Carefully put a few of the rice balls in it and fry them until golden, about 6-8 minutes. Transfer them to paper, season with salt.

Serve the meatballs with the spicy sauce.
