How To Cook Breaded Stuffed Pasta - Recipe

Required products :

  • 2 teaspoons salt
  • 1 packet of pasta rigatoni
  • 1 tablespoon olive oil
  • 450 grams of minced pork
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1/2 head onion
  • 2 cloves garlic
  • 1 teaspoon ripe mozzarella
  • 1 teaspoon flour
  • 2 large eggs
  • 1 teaspoon bread crumbs (or breadcrumbs)
  • parsley for serving
  • parmesan for serving
  • marinara sauce

 

Method of preparation :

Put a pot of water on the stove. When the liquid boils, add 1 teaspoon of salt and pour the rigatoni. Let simmer for about 5-6 minutes, until al dente.

Drain the excess water from the pasta and add olive oil to the pasta - stir and leave to cool.

Meanwhile, in a bowl, mix the minced meat, season it with the remaining salt, pepper, oregano and parsley. Finely chop the onion, squeeze the garlic cloves and add the products to the mixture. Finally, add the grated mozzarella. Mix well with your hands or a spatula to mix the ingredients.

Transfer the mixture to a sandwich bag (or pouch) and cut off one corner. Fill the rigatoni with the combination of minced meat and mozzarella, using the resulting pouch - the first on one side, then turn and add each pasta on the other end.

 

Put the stuffed rigatoni in a pan and put them in the freezer for 30 minutes.

Heat frying oil in a deep frying pan (at 180 degrees).

Divide the breading products - flour, eggs and breadcrumbs in three different bowls.

Take a stuffed pasta, bread it first in the flour, dip it in the beaten eggs and finally roll it in breadcrumbs. Fry until golden brown (about 4 minutes).

Remove the prepared paste on a wire rack to drain the absorbed fat.

 

When you have fried all the stuffed pasta, arrange them on a plate, sprinkle with grated Parmesan and parsley and serve with tomato marinara sauce.
