Required products :

  • 700 grams of flour
  • 1 egg + 1 yolk
  • 50 grams of butter
  • 50 milliliters of olive oil
  • 300 grams of yogurt
  • 10 nuts
  • 5 - 6 dried figs
  • 5 - 6 dried apricots
  • 150 grams of brown sugar
  • 50 grams of fresh yeast
  • 1 teaspoon salt

Method of preparation :

Dissolve the yeast in the yogurt. Then add the egg and yolk, softened butter, olive oil, salt and sugar. Mix everything thoroughly and gradually add the sifted flour. Knead an elastic dough that does not stick to your hands. Add ground walnuts, apricots and figs to it. If the dough sticks, use a little more flour. The more you knead, the more airy the dough will be. Shape into a ball, place in a bowl, place in a warm place and cover with a damp cloth.

After about an hour, when the dough has doubled in volume, knead once more and leave to rise. But if you use fast-acting yeast, divide it into small balls immediately after the first leavening. Form loaves, arrange them in a floured pan or form and leave for 40 minutes. When they increase in volume, grease them with olive oil and place in a well-heated oven for about 30 minutes. For the readiness of the breads, orient yourself by their color - if they turn red enough, then they are ready.
